2009 Turkeys: This year we are raising heritage turkeys again as well as the
delicious broad-breasted white turkeys that we have raised in the past. Broad
breasted white turkeys are a fast-growing bird that has been bred
forcommerical/industrial production systems. We find that they are hardy once
they reach 5 or 6 weeks old, and after this age they thrive in a free-range
pasture environment and devour vast quantities of our lush green pasture.
They are bred to be a heavy bird with lots of meat, and when raised naturally
on pasture pasture are tender and flavorful.

Heritage Breeds: These are the old breeds that flourished prior to the development of industrial agriculture. Many old-fashioned American livestock breeds are disappearing because they no longer have a role in American agriculture. The American Livestock Breeds Conservancy and Slow Food USA are working to preserve these old, endangngered breeds and have recognized that one way to do this is to encourage people to eat them!

This year we have Bourbon Red, Spanish Black and Royal Palm. This should give us a nice range of sizes as the Bourbon Reds and Royal Palms tend to be on the smaller side and the Spanish Blacks are large.

If you would like to order one keep in mind that they are quite different from the commercial white birds. They have a leaner rangier frame with less breast meat, may have some dark pin feathers, and because they take twice as long to grow out they will have a richer flavor. For more information on the history of the turkey and what constitutes a heritage turkey check out the ALBC's Definition of a Heritage Turkey. For cooking ideas and information read about Rick Rogers' and William Rubel's differing approaches to roasting heritage turkeys.

Ordering, Price and Deposit: E-mail orders are preferred (its easier for our record keeping!), and you can also order by phone or postal mail, or in person at the farm or at our market stand. Please specify whether you want a BBW or heritage turkey. If you haven't ordered from us before, we require a $10.00 non-refundable deposit to hold your order.

BBW Turkeys: $3.95/lb. Average weight 14 - 18lbs. If you prefer smaller or larger let us know and we will do out best to accommodate your preference.

Heritage Turkeys: $6.75/lb. Weight will probably be in the 8 - 16lb range.

Pickup is at our on-farm market or at another time/place by arrangement. Our regular vendors from last season's winter markets as well a one or two new vendors will be bringing their products to the Thanksgiving Market - fall veggies, baked goods, wild-caught salmon.
